hellllllo monday

Wow. It has been a week since my last post.  I have a lot of catching up to do!  I meant to post pictures from Savannah last week so I will begin there.  We started off by having lunch in Palmetto Bluff on our way to Savannah.  Very neat area and best chicken salad I have ever put in my body. Omg.

 The Olde Pink House was my favorite part of our trip.  We sat at the bar downstairs for an hour or so which hasn't changed from the 1800's.  You can't even read a menu down there it is so dark and they only use candles.  This bar has two fireplaces, a pianist, and zero tv's.  My kind of bar.  When our reservation was ready we headed upstairs to this romantic table.  We brought a bottle of wine from our Napa trip {they don't have a corkage fee for the first bottle so this worked out well!}.   The food was amazing {food network was correct...it was the best thing I ever ate} and  I will go back next time we stay in Savannah.

So that was last weekend.  This weekend we bought an oven.  Helllllllo gorgeous!  Ours was so old {circa 1993} the employees of Sears were even making fun of it.  We had no idea what size our existing wall oven was and need the cut out dimension so I brought the user manual.  It actually wouldn't turn off after prolonged use so this wasn't something I wanted to put off much longer.  Turning your oven off/ on by the circuit breaker is a tad inconvient.

vacay!

What up bloggy world!  Happy Sunday! This post is a little sappy….so go ahead and X out if you’d like. :) This weekend my sweet sweet husband and I headed to Savannah for our 3 year anniversary. I CANNOT believe it has been 3 years. Most people say the first years as newlyweds can be a challenge – for us it has been a breeze. If anything marrying Matt has made me better….he is after all the nicest person I have ever met. I know your “supposed” to say that about your spouse but seriously he is THAT nice. If you have met him and reading this you are probably nodding your head. He makes me dinner most nights of the week (I’m a C- wife ladies and gents…just kidding but not really…he gets home before me!), works in the yard on his own AND has started to become somewhat tidy. Okay the last one is lie…he still stuffs clean laundry under the bed to hide it from me....maybe by our 5th anniversary I will have changed him.

We have gone on a trip every anniversary and it is always something to I look forward to.  Two years ago we went to Chicago and last year we went to San Francisco/ Napa.  I hope to upload/ blog about Savannah tomorrow because I think we ate our way through the city.  Such a blast!  :)

move over martha!

I FINALLY found a macaroni and cheese recipe that I love.  I have been on the hunt to find  a recipe that is both egg free and CREAMY.  This recipe is the cat’s meow….the bee’s knee’s…the PERFECT blend.  This was my 5th try and of course it is a Martha freggin Stewart recipe.  No shocker there.   Thankssssss Martha.

Perfect Macaroni and Cheese
Ingredients

6 tablespoons unsalted butter, plus more for dish

5 1/2 cups milk

1/2 cup all-purpose flour

2 teaspoons kosher salt

1/4 teaspoon freshly grated nutmeg

1/4 teaspoon freshly ground black pepper

1/4 teaspoon cayenne pepper

4 1/2 cups (about 18 ounces) grated sharp white cheddar

2 cups (about 8 ounces) grated Gruyere or 1 1/4 cups (about 5 ounces) grated pecorino Romano
(I used Gruyere)

1 pound elbow macaroni

Method

1. Heat the oven to 375 degrees. In a medium saucepan set over medium heat, heat milk. Melt remaining 6 tablespoons butter in a high-sided skillet over medium heat. When butter bubbles, add flour. Cook, stirring, 1 minute.

2. Slowly pour hot milk into flour-butter mixture while whisking. Continue cooking, whisking constantly, until the mixture bubbles and becomes thick.

3. Remove the pan from the heat. Stir in salt, nutmeg, black pepper, cayenne pepper, 3 cups cheddar, and 1 1/2 cups Gruyere or 1 cup pecorino Romano. Set cheese sauce aside.

4. Fill a large saucepan with water. Bring to a boil. Add macaroni; cook 2 to 3 fewer minutes than manufacturer's directions, until outside of pasta is cooked and inside is underdone. (Different brands of macaroni cook at different rates; be sure to read the instructions.) Transfer the macaroni to a colander, rinse under cold running water, and drain well. Stir macaroni into the reserved cheese sauce.

5. Pour the mixture into the prepared casserole dish. Sprinkle remaining 1 1/2 cups cheddar and 1/2 cup Gruyere or 1/4 cup pecorino Romano. Bake until browned on top, about 30 minutes. Transfer dish to a wire rack to cool for 5 minutes; serve.

I brought this to a little group birthday dinner Saturday which was a blast. Casey and her husband Nick have birthdays that are a day apart and Matt’s birthday is next week so we just added him to the mix.

Also this weekend I went to Mary Jo’s which is the most overwhelming place I have been to.  I think I lasted thirty minutes and got the heck out of there.  I am trying to find a print to make DIY roman shades with fabric that isn’t that expensive in case I fail so I won’t feel sad and broke…just sad.

I did just that.  TWO Krispey Kreme Doughnuts.  TWO!  They are just so good it's hard to cut myself off.

REALLY looking foward to a weekend of staying in CLT!  Matt and I have a little sushi date night tonight, a birthday party Saturday night, and I am going to a fashion show Sunday.  Can't wait!

double trouble








I shared a room with my older sister most of my life and we had the twin bed set up. Whenever I see twin beds I always think of the time I tried to trick my little sister (who had her OWN room on the same floor as my parents) into switching. She fell for it. I was in the 4th grade and she was in the 2nd so I was able to boss her around (love you Sam!). My Mom was giving a piano lesson so we quietly packed all her belongings into trashbags/ laundry baskets and made the switch. I guess I thought my Mom wouldn't notice? Well she did and my plan failed...thanks Mom. :)

marina becomes a mrs.!

I cannot begin to say how thankful I was to not sleep in a hotel this past Saturday.  These past 3 weekends have been a whirlwind. There is something about going to bed early on a Saturday night and sleeping in that makes me a HUGE dork but I am happy being lame.  Last weekend one of my closest friends tied the knot and the weekend before that we celebrated her bachelorette.  OMG that was one of the most fun groups I have been a part of.  We did a slumber party/ lingerie shower Friday night at my abode followed by a night of dancing in uptown Charlotte.  So. much. fun.

Then that following weekend was her actual wedding which was GORGEOUS! The venue was stunning, the decor and colors, everything looked like "Marina" to me. This may sound a little crazy but throughout her reception I kept noticing how happy she was. I know all brides are happy, but I have known her for almost 10 years and she looked elated and so in love. It was just so refreshing to watch.  I was so happy to be part of their special day!
